Bran and cheese biscuits

  • 125
    cake flour
  • 125
  • pinch salt
  • 50
    butter, cut into pieces
  • 80
    Cheddar cheese, grated
  • 1
    egg yolk
  • iced water, if necessary


Preheat the oven to 180 ºC (350 ºF). Line a baking sheet with waxed paper. Mix the dry ingredients in a mixing bowl and rub in the butter using your fingertips. Add the cheese and mix. Add the egg yolk and cold water, if necessary, and mix to form a stiff dough. Chill slightly. Roll out on a lightly floured surface and cut out rounds, 2 cm in diameter. Place on the baking sheet and bake for about 10 minutes or until golden brown. Serve with the dried fruit cheese roll (see recipe). Makes 40 biscuits.
