45.00 ml raisins — seedless
2.00 kg spinach
100.00 ml fresh chillies — 573
1.00 garlic — cloves, crushed
45.00 ml almonds — flaked
sea salt and freshly ground black pepper

Method:

Soak the raisins in hot water while preparing the spinach.
Wash the spinach well and remove the hard stems. Cut the leaves into smaller pieces.
Bring a little salted water to the boil in a large saucepan.
Add the spinach and cook for about 3 minutes. Keep a bowl of ice-cold water on hand.
Drain the spinach and plunge into the bowl of cold water.
Drain immediately, pat dry and chop coarsely.
Drain the raisins.
Heat the oil in a heavy-based saucepan and sauté the garlic, almonds and raisins in the hot oil.
Add the spinach and season well. Braise for about 20 minutes over low heat, stirring occasionally.
Allow to stand for 15 minutes before serving.
