Ingredients (13)

2.00 kg beef — flat shoulder
30.00 ml flour — cake
60.00 ml sunflower oil
6.00 garlic — cloves, crushed
salt and freshly ground black pepper
2.00 bay leaves
250.00 ml beer
30.00 ml honey
250.00 ml orange juice — fresh
nutmeg — freshly grated
16.00 apricots — dried
2.00 onions — large, chopped
3.00 sweet potatoes — sliced

Method:

Wipe meat with a vinegar-soaked cloth. Sprinkle with flour.
Heat oil in a flameproof casserole dish and brown beef lightly on all sides on top of stove. Add garlic, salt, pepper and bay leaves, then pour in beer, honey and orange juice. Sprinkle nutmeg over.
Cover tightly and bake at 160 ºC for about 1 1/2 hours. Add apricots, onions and sweet potatoes, cover and bake for a further 1 1/2 hours, or until a knife pierces meat easily.
Serve with herbed cabbage wedges.
