Braised shoulder of beef with apricots and sweet potatoes

    flat shoulder of beef (well matured)

  • salt and milled black pepper

    medium to large sweet potatoes, sliced


Wipe meat with a vinegar-soaked cloth. Sprinkle with flour. Heat oil in a flameproof casserole dish and brown beef lightly on all sides on top of stove. Add garlic, salt, pepper and bay leaves, then pour in beer, honey and orange juice. Sprinkle nutmeg over. Cover tightly and bake at 160 ºC for about 1 1/2 hours. Add apricots, onions and sweet potatoes, cover and bake for a further 1 1/2 hours, or until a knife pierces meat easily. Serve with herbed cabbage wedges. TOTAL KILOJOULE COUNT: 19 100 kJ (4 565 Cal). A portion: 3 185 kJ (760 Cal).
