Ingredients (12)

30.00 ml oil
1.00 onion — large, chopped
1.00 garlic — cloves, chopped
10.00 ml brown sugar — soft
2.00 apples — green, cut into wedges
4.00 pork loin steaks
60.00 ml brandy
30.00 ml wholegrain mustard
250.00 ml stock — chicken
125.00 ml prunes — pitted
190.00 ml cream
0.00 salt and freshly ground black pepper

Method:

Heat oil in a large, heavy-based pan.
Sauté onion and garlic for 10 minutes, until soft.
Add sugar and apple and cook, stirring regularly, until apple begins to brown.
Remove from pan.
Reheat pan and lightly brown the pork steaks, two at a time.
Return all steaks to the pan, add brandy and stir until liquor has almost evaporated.
Add mustard and stock.
Simmer over a low heat, covered, for 15 minutes.
Return browned apple to pan with prunes and cream.
Simmer for 10 minutes, or until pork is tender.
Season to taste before serving.
