Ingredients (5)

30.00 ml custard powder
3.00 eggs — just the yolks
600.00 ml milk
30.00 ml castor sugar
50.00 ml bourbon

Method:

Make a thin paste with custard powder, egg yolks and a little milk.
Bring remaining milk to boil. Pour onto egg yolk mixture, stirring or whisking continuously.
Return mixture to saucepan and cook gently for a minute or so until it thickens, but don’t allow to boil. Stir in bourbon.
