250.00 g droë klein witbone
250.00 g red kidney beans — dried
2.00 butter
6.00 carrots — chopped
2.00 celery stalks — sliced
2.00 onion — finely chopped
4.00 garlic — finely chopped
2.00 tomatoes
2.00 bay leaves
500.00 ml red wine
500.00 ml stock — vegetable
1.00 salt and freshly ground black pepper
1.00 bread — French, sliced

Method:

Week die bone oornag in koue water (jy kan die bone saam in ‘n bak gooi). As jy vergeet om dit te doen (ek kom dit ge-reeld oor!), sit al die bone in ‘n kastrol met koue water. Bring tot kookpunt. Haal van hitte af en laat staan vir sowat 2 uur. Dreineer. Smelt botter in ‘n groot kasserol. Braai die wortels, uie, seldery en knoffel saam tot sag en deursigtig. Voeg bone by en meng goed. Voeg res van die bestanddele, behalwe die brood, by. Meng goed en laat kook oor ‘n stadige hitte vir 2-3 uur tot die bone sag is. Gooi nog water by as die vloeistof te min raak. Daar moet ‘n lekker sous wees. Rooster die brood net voordat jy die gereg voorsit, en plaas soos ‘n kors op die bone. Die brood sal van die sous absorbeer.
