Boerewors toasties

    slices bread
  • butter for spreading
  • 1
    onion, finely chopped
  • 2
    tomatoes, peeled and finely chopped

    mustard powder

    cooked boerewors, sliced
  • 30
    finely chopped parsley

    grated Cheddar cheese


15-20 mins
Switch on the oven grill. Lightly butter the bread and place on a baking sheet, buttered side up. Sauté the onion in a little oil until soft. Add the tomatoes and simmer for 5 minutes. Add the mayonnaise, mustard powder and boerewors. Simmer for 5 minutes more. Spoon onto the bread slices, sprinkle with parsley and cheese and grill for 5-10 minutes or until the cheese has melted and is bubbling. Serve immediately. Serves 4.
