Blushing pink cake

  • few drops red food colouring
  • 200
    soft butter
  • 500
    icing sugar sifted
  • 5
    vanilla essence


Prepare this variation as described for the marble cake, but substitute a few drops red food colouring for the cocoa (a medicine dropper works well). Add the colouring to the full quantity of batter and turn the batter into the prepared tin. Place the tin on an upturned saucer and, microwave for 6 minutes on 100 percent power or till the cake shrinks from the sides of the tin. Leave for 10 minutes. Turn out onto, a wire rack and cool. Prepare the icing. Beat the butter till light and creamy. Add the icing sugar by the spoonful, beating well after each addition. Add the vanilla essence and mix well. Cover the entire cake with the icing and decorate with apple mint leaves if desired.
