Blue cheese soufflé

    cake flour
  • 170
  • 3
    eggs yolks
  • 200
    blue cheese
  • salt
  • freshly ground black pepper
  • 4
    egg whites


Preheat oven to 180 ºC.
Grease 4 x 8 cm ramekins.
Melt butter in a large pan over low heat.
Stir in flour. Remove from heat.
Slowly add milk in a continuous stream, stirring all the time.
Return to heat and bring to boil, continue stirring or whisking.
Simmer for one minute, then cool for five minutes.
Stir in egg yolks, one at a time.
Add blue cheese.
Season to taste.
Whisk egg whites until stiff.
Fold into mixture with a metal spoon.
Pour into ramekins.
Bake for 5 - 10 minutes, or until well-risen and browned on top. Serve at once.
