180.00 g flour — cake
15.00 ml Baking powder
2.00 ml salt
60.00 g butter — soft
30.00 g blue cheese — crumbled
1.00 eggs — extra-large, beaten
60.00 ml milk

Method:

Preheat the oven to 220 ºC (425 ºF). Spray a baking sheet with non-stick spray. Sift together the cake flour, baking powder and salt. Rub in the butter with your fingertips until the mixture resembles breadcrumbs. Add the blue cheese and mix. Blend the egg and milk, make a hollow in the centre of the flour mixture and add just enough of the milk mixture to form a dough. Mix with a knife until just blended. Gently roll out the dough on a floured surface until about 2 cm thick. Cut out circles with a 4 cm cookie cutter and arrange the dough circles on the prepared baking sheet. Bake for 15 minutes or until done. Serve hot with butter and Cheddar cheese, if desired.
Makes 15 scones.
