Blue cheese and nut biscuits

    nuts, chopped
  • 300
    cake flour
  • 175
  • 125
    blue cheese, crumbled

Place the nuts in a food processor and process until fine.
Add the flour and butter and process until the mixture is crumbly.
Add the blue cheese and process until the mixture forms a ball.
Knead lightly to bring everything together, roll the pastry into a roll, cover with clingfilm and chill until needed.
Preheat the oven to 180 °C and lightly oil a baking sheet.
Cut the pastry into 3 mm thick slices, arrange them on a baking sheet and bake for 15 to 18 minutes or until pale brown.
Remove from the oven and leave to cool on the baking sheet.
Store in airtight containers when completely cooled.
Serve with drinks.
