Ingredients (11)

2.00 tomatoes — large, peeled and chopped
500.00 ml tomato juice
15.00 ml Worcestershire sauce
15.00 ml vinegar — balsamic
1.00 lemon — juice only
4.00 Tabasco sauce — drops
salt and freshly ground black pepper — to taste
to serve — to serve
2.00 celery leaves
45.00 ml sour cream
fresh parsley — sprigs

Method:

Heat the tomatoes in a medium saucepan and bring to the boil. Simmer for about 3 minutes. Add the tomato juice and seasonings. Bring to the boil once more and serve. Garnish with celery leaves and a spoon of sour cream. Serve with goat’s milk cheese and fresh bread.
Serves 2-3.
