Ingredients (14)

SPICE MIXTURE
30.00 ml salt
10.00 ml cayenne pepper
10.00 ml paprika
15.00 ml onion — flakes
15.00 ml freshly ground black pepper
5.00 ml garlic — flakes
5.00 ml peri-peri
10.00 ml dried oregano
5.00 ml dried thyme
5.00 ml dried basil
mustard powder — pinch
cloves — ground, pinch
6.00 chicken breast fillets — skinned and deboned

Method:

Process all spice mixture ingredients until fine. Store in an airtight container and use as needed. Flatten each of the chicken breasts with the palm of your hand until about 5 mm thick. Sprinkle a little of the mixture on both sides of each chicken breast. Heat a pan until very hot, brush with oil and fry the chicken breasts until done and blackened on both sides. Serve with sweet ‘n sour cucumbers (see recipe), yoghurt and rice.
Serves 4-6.
