Black olive pesto with mozzarella

  • 400
    black olives
  • 6
    sweet basil leaves
  • 250
    olive oil
  • 1
    lemon, juice and rind
  • salt and freshly ground black pepper
  • 1
    ball mozzarella cheese
  • 12
    slices fresh, pre-sliced bread


1. Stone the olives and place in a processor along with the garlic and sweet basil. Process until fine. Add olive oil, lemon juice and rind. Process to make a paste. Season. 2. Cut mozzarella into slices. Cut the crusts off the bread. 3. Generously spread slices with the olive pesto. Place one slice of mozzarella on half the bread. Top with a spread slice and cut in half diagonally. Serves 6
