Black olive pesto

  • 100
    g
    black olives, stoned
  • 15
    ml
    capers in brine
  • 1
    lemon, juice
  • 2
    cloves garlic
  • 50
    g
    walnuts
  • 50
    ml
    olive oil
  • 100
    ml
    freshly grated Parmesan cheese
  • salt and freshly ground black pepper
 

Method

 
Place all the ingredients in a food processor and process until smooth. Season to taste with salt and pepper. Makes about 250 ml pesto.
