These are the perfect biscuits to "dunk" in coffee also they are quick and easy to make.

flour
butter
eggs — yolks only
egg
sugar
Baking powder
lemon — zest only
vanilla — powder
or

Method:

Cream the butter and sugar until fluffy and white add the eggs, lemon rind, vanilla and baking powder beat until all the sugar has dissolved add the flour bit by bit with the milk.

 You are looking for a pliable – workable – biscuit dough that can be rolled into sausages without sticking to your hands, I remember Nonna sometimes throwing in some aniseeds as well.

Cut into 10cm lengths and twist them or knot them brush them with beaten egg white and sprinkle with sugar before putting them in the oven.

This batch makes between 120 – 150 biscuits
Rosa bakes them on her oven racks

Remove the rack – cover with tin foil and spray with spray and cook return to the oven and cook for 18 -20 minutes at 180 degrees.
