  • 200
    cake flour
  • 100
    castor sugar
  • 5
    baking powder
  • 1
    extra-large egg, lightly whisked
  • 100
    pecan nuts, chopped
  • 1
    lemon, finely grated rind


Preheat oven to 180 °C and grease a baking sheet with butter or non-stick spray.
Combine the flour, sugar and baking powder and add the egg, nuts and lemon rind.
Using your hands, mix well to form a stiff dough; the mixture may initially look dry but will eventually come together.
Knead gently and shape into a crescent-shaped roll.
Flatten the sides lightly.
Place the roll on a baking sheet and bake for 20 minutes or until pale brown.
Leave to cool for 10 minutes before cutting into diagonal slices.
Arrange the slices on a baking sheet and bake for another 10 minutes or until crisp and dry.
Cool completely before storing.
