2.00 Litres ice cream — vanilla
400.00 g blackcurrants — or blackcurrants
45.00 ml castor sugar
250.00 g strawberries — hulled
30.00 ml castor sugar

Method:

Using a wooden spoon, slightly soften the ice cream in two mixing bowls. Drain the blackcurrants or blueberries and transfer to a dish. Sprinkle with the castor sugar and set aside.
Cut the strawberries into small pieces and sprinkle with castor sugar. Leave for about 10 minutes.
Meanwhile, add the blackcurrants or blueberries to one of the bowls of ice cream and mix until just blended. Spoon the ice cream mixture back into the tub and freeze overnight.
Repeat with the strawberries and the other bowl of ice cream.
To serve, spoon a scoop of each ice cream into glass bowls.
