Beetroot and potato salad

    cooked beetroots, sliced
  • 1
    leek OR onion, sliced into rings
  • 6
    medium potatoes, boiled until tender and peeled
  • 100
    basic salad dressing mixed with a little sour cream (see recipe)
  • chopped parsley
  • few capers


Arrange the beetroot slices in a salad bowl. Sauté; the leek in a little oil until, tender and spoon over the beetroot. Slice the potatoes and arrange on top of the beetroot slices. Pour over the salad dressing and sprinkle the parsley and capers on top.
