Ingredients (10)

45.00 ml mirin
45.00 ml soy sauce
45.00 ml wine — rice, sake
15.00 ml sugar
250.00 g beef — fillet, thinly sliced
15.00 ml sunflower oil
lettuce — to garnish
150.00 g noodles — vermicelli
5.00 ml dried chilli flakes
lime — diced, to garnish

Method:

Mix mirin, soy sauce, saké and sugar in a bowl, stirring until sugar has dissolved. Add beef and marinate for 30 minutes.
Heat oil in a wok or cast-iron frying pan, add beef and stir-fry for 1 minute, then add marinade and stir-fry for 2 minutes.
Place lettuce in 4 sake cups, fill with noodles and top with beef. Pour over pan juices, sprinkle with chilli flakes and garnish with limes.
