Ingredients (13)

500.00 g beef — topside or fillet, cubed
4.00 anchovy fillets
10.00 ml mustard seeds
1.00 eggs — extra-large, yolk only
10.00 ml capers — chopped
salt and freshly ground black pepper
10.00 ml Worcestershire sauce
125.00 ml onion — finely chopped
garnish — garnish
12.00 bread — fried in garlic oil
125.00 ml sour cream — whipped
12.00 oysters — smoked

Method:

1. Using the chopping blade of a food processor, chop the meat. Add the remaining ingredients and mix well. Taste and adjust seasoning. Form the meat into 12 balls.
2. Pipe a dollop of cream onto each of the bread circles. Place a tartare ball on each and pipe a rosette of cream on top. Place a smoked oyster on the rosettes and round off with a few capers.
