Low-carb beef tamales with dark chocolate and sour cream.

Ingredients (16)

1 red pepper — chopped
1 green pepper — chopped
1 yellow pepper — chopped
2 garlic — cloves
1 onion — finely chopped
30 ml fresh chillies — 573
5 ml cumin — ground
5 ml paprika — smoked
5 ml dried oregano
500 g beef mince
salt and freshly ground black pepper
410 g tomatoes — tinned
2 dark chocolate — 70%
250 ml sour cream
500 ml cheese — grated
12 sweetcorn — leaves

Method:

Heat a pot on the stove and add the olive oil. When the oil is hot, add the onion, garlic, peppers, and all the spices and saute until the vegetables are soft.

Add the beef mince and keep stirring so that the beef can brown. Place the lid on and cook for about 5 – 10 minutes on medium heat.

Season with salt and pepper. Add a  little water if necessary. Add the tomatoes and cook for about 10 minutes to reduce the mixture.

Add the chocolate, it gives the sauce a lovely color a deep flavor.

Now remove the leaves off the mealies and place two overlapping leaves on a work place. spoon some beef mince onto the leaves and cover with two more leaves.

Close the sides with string or strips of the mealie leaves. Repeat until all the beef mince are “packaged”.

Pack in a oven-dish and bake for about 10 minutes before serving.

Remove the tamales from the oven and place one or two tamales on a plate, open slightly to reveal the beef and top with a good dollop of sour cream and grated cheese.

Serve meal with a simple tomato salsa or salad.
