Ingredients (9)

800.00 g steak — cubed, stewing
oil — for frying
8.00 potatoes
2.00 leeks
250.00 ml orange juice — fresh
15.00 ml mustard — powder
200.00 ml water
1.00 stock cube — beef
salt and freshly ground black pepper — to taste

Method:

In a heavy-based saucepan brown the meat cubes in a little heated oil. Add the whole black peppercorns and remove the meat from the pan. Peel and slice the potatoes. Rinse the leeks well and slice into rings. Blend the orange juice and mustard. Dissolve the stock cube in water and add to the orange juice mixture. Layer the meat, potatoes and leeks in a heavy-based casserole dish. Pour over the liquid mixture. Heat and simmer slowly until the potatoes and meat are tender. Serve hot on buttered couscous and garnish with strips of orange rind.
Serves 4-6.
