Beef parcels

    thin slices beef
  • 4
    slices ham, halved
  • 4
    gherkins, sliced
  • 4
    slices Cheddar cheese, halved
  • 145
    cake flour, seasoned with salt and pepper
  • 2
    extra-large eggs, beaten
  • fresh white breadcrumbs
  • oil


Trim the edges of the beef slices and gently pound with a meat mallet. Place a slice of ham, a few pieces of gherkin and a slice of cheese on one half of each slice of beef. Wrap the fillings in the slices of beef, ensuring that the fillings are not exposed. Secure with cocktail sticks. Roll the parcels in seasoned cake flour and then in beaten egg (you may need an extra egg, beaten). Roll in the white breadcrumbs and place on a baking sheet. Chill for at least 30 minutes before frying. Heat enough oil in a pan for shallow frying and fry each beef parcel until golden brown. Drain on paper towelling and serve immediately. Serves 6-8.
