Beef olives with Parma ham

Ingredients (8)

500.00 g beef — thinly sliced
salt and freshly ground black pepper
30.00 ml mustard — prepared
100.00 g parma ham — slices
170.00 g artichokes — tinned hearts, diced
25.00 ml butter
125.00 ml stock — meat
125.00 ml cream

Method:

Spread the beef with 20 ml of the mustard and season with salt and pepper to taste.
Place the Parma ham slices and artichoke hearts on top of the slices of beef and roll up tightly. Secure with toothpicks.
Fry the rolls rapidly in melted butter until brown.
Add the meat stock and cream, cover and simmer until the meat is tender.
Remove the beef olives and season the sauce with the remaining mustard and extra salt and pepper.
Serve with pasta.
