Beef olives

    thin slices of beef
  • salt

    onion, sliced
  • 2
    cloves garlic, crushed

    green pepper, diced
  • oil

    button mushrooms, sliced
  • 2
    tomatoes, skinned and diced

    Cheddar cheese, finely grated

Gently flatten the beef slices with a meat mallet. Season lightly with salt and pepper and set aside. Sauté the onion, garlic and green pepper in a little oil in a pan until soft. Add the mushrooms and stir-fry until pale brown. Add the diced tomato and simmer until most of the liquid has evaporated. Season well with salt and pepper. Spoon a little of the filling on each slice of beef and sprinkle with about 20 ml Cheddar cheese. Roll up each slice of meat and secure with 2 toothpicks. Fry in a little oil until browned outside and cooked inside. Transfer to a serving platter. Make a sauce using the pan juices and pour over the rolls. Serve with a salad and fresh bread rolls.
