Ingredients (16)

Dressing:
20.00 ml wholegrain mustard
20.00 ml vinegar — cider
20.00 ml honey
10.00 ml lemon juice
45.00 ml fresh chillies — 573
1.00 garlic — cloves, crushed
0.00 salt and freshly ground black pepper — to taste
Salad:
20.00 ml oil
15.00 ml butter
400.00 g beef — fillet, cut into strips
0.00 sea salt and freshly ground black pepper
1.00 butternut — thinly sliced
0.00 oil — for deep frying
2.00 potatoes — thinly sliced
100.00 g lettuce — mixed salad greens
80.00 g pistachio nuts

Method:

Dressing:

Whisk together all the ingredients and set aside.
Salad:

Heat the oil and butter in a large pan over high heat and stir-fry the fillet strips until brown and done. Season with
salt and pepper to taste and keep warm. Fry the butternut slices in the same pan until just done but still firm. Add the
butternut slices to the meat and keep warm. Meanwhile heat the oil for deep-frying in a small saucepan and fry the potato slices until crisp. Mix the meat
mixture, potato and butternut chips, salad greens and pistachio nuts in a large salad bowl and drizzle with the dressing. Serve immediately.
