Beef curry stir-fry with butter beans

Ingredients (14)

600.00 g beef — strips
sea salt and freshly ground black pepper
oil
30.00 ml curry powder
garlic — cloves, crushed
1.00 onion — sliced into rings
15.00 ml fresh ginger — freshly grated
2.00 ml turmeric
2.00 ml coriander — ground
2.00 ml cumin — ground
curry leaves
2.00 potatoes — peeled and cut into chunks
2.00 tomatoes — peeled an finely chopped
410.00 g butter beans — tinned and drained

Method:

Season the beef strips with salt and pepper and stir-fry in a little oil until brown. Sprinkle with 15 ml (1 T) of the curry powder and stir-fry for another minute. Remove the meat from the pan and sauté the onion, garlic and ginger in the same pan until tender. Reduce the heat and add the remaining curry powder, turmeric, coriander and cumin. Stir-fry for another minute. Add the curry leaves, potatoes and tomatoes and simmer until the potatoes are tender. Return the meat to the pan and add the butter beans. Simmer until the flavours are well blended. Add the butter bean liquid if the mixture becomes too dry.
Serve with rice and chutney.
