Beef braised in red wine with vegetables

Ingredients (9)

1.00 kg beef — or pork fillet
190.00 ml red wine — or beef stock
6.00 onion — baby, halved
2.00 red pepper — sliced
2.00 parsnips — peeled, sliced
2.00 carrots — peeled, sliced lengthways
2.00 garlic — cloves, crushed
1.00 fresh chillies — chopped
sea salt and freshly ground black pepper

Method:

Spray a large pan with non-stick cooking spray.
Heat pan, add fillet and sear on both sides. Transfer to a large plate and keep warm.
Remove pan drippings, pour stock into pan and add all vegetables, garlic and chilli. Stir and cook until all liquid has evaporated and vegetables are tender, adding more wine or stock if necessary.
Arrange fillet on a serving plate and top with vegetables. Season with salt and pepper.
Garnish with fresh basil and serve warm.
