Ingredients (13)

15.00 ml oil
25.00 ml butter
450.00 g steak — cubed, stewing
sea salt and freshly ground black pepper
1.00 onion — large, sliced into rings
3.00 garlic — cloves, crushed
1.00 red pepper — seeded and diced
2.00 carrots — medium, scraped, chopped
650.00 g potatoes — peeled and cubed
250.00 g pumpkin — diced
410.00 g tomatoes — whole, finely chopped
250.00 ml stock — vegetable or chicken
200.00 g broccoli — broken into florets

Method:

Heat the oil and butter in a large saucepan. Season the meat with salt and pepper and fry in heated oil until brown. Remove from the pan and set aside.
Sauté the onion, garlic and red pepper until tender. Add the carrots, potatoes and pumpkin and return the meat to the pan. Add the tomatoes and stock, reduce the heat and simmer until the meat and vegetables are just tender. Add the broccoli and simmer until just tender but still slightly crisp. Season with salt and pepper if necessary.
Serve with rice.
Serves 4-6.
