Ingredients (12)

10.00 ml oil
600.00 g rump steak
1.00 onion
2.00 carrots
2.00 potatoes
15.00 ml peppercorns — Madagascan
250.00 ml beer — Guinness
250.00 ml stock — beef
25.00 ml tomato paste
15.00 ml cornflour
2.00 ml dried thyme
400.00 g puff pastry

Method:

Heat oil in a saucepan over high heat. Brown meat in batches, then remove from the saucepan and place in a greased ovenproof dish.

Add onion, carrot and potato to the dish. Sprinkle with peppercorns.

Mix together the Guinness, beef stock and tomato paste in a saucepan. Bring to the boil, then reduce heat to simmer.

Mix cornflour with a little cold water, then stir into the stock mixture.
Cook, stirring, until mixture has thickened. Stir in thyme and salt to taste.

Pour gravy over the meat and veggies. The dish shouldn’t be more than three-quarters full.

Cut pastry into a square or rectangular shape, so that the edges of the pastry will overlap the sides of the baking dish.
Bake in preheated oven at 200 ºC for 40 minutes, or until golden.
