Ingredients (9)

80 ml apple juice
80 ml vinegar — red wine
60-80 ml mustard — powder
30 ml mustard — seeds
10 ml cornflour
fresh basil — finely chopped
30 ml red onion — finely chopped
15 ml brown sugar
allspice — ground, pinch

Method:

Mix the apple juice, vinegar, mustard powder and seeds together with 80ml water. Cover and leave to stand for four to six hours. Stir occasionally.

Pulse the mixture in a food processor until the mustard seeds are coarsely chopped.

Cook the mixture over a pot of simmering water or in a double boiler for 10 minutes. Mix the cornflour with a little water to form a paste and add along with the remaining ingredients to the bowl. Cook for 25 minutes or until the mustard has thickened. Stir often during the cooking process.

Pour into a clean, sealable container and keep refrigerated.
