Basic vinaigrette recipe

  • 30
    wine vinegar or lemon juice or a mixture of both
  • pinch dry mustard
  • 90
    olive or sunflower oil
  • good pinch salt and freshly ground black pepper
  • 30
    chopped herbs of your choice


Stir together ingredients vigorously. They will separate on standing but recombine easily when whisked. The vinaigrette can be made in a screw-top jar and shaken vigorously. Makes 125 ml.
