Basic vinaigrette

    olive oil
  • 30
    white wine vinegar or balsamic vinegar (or more to taste)
  • 5
    mustard powder
  • 2

    clove garlic, crushed (optional)
  • salt and milled pepper


Wisk all ingredients together well. OPTIONS: Add 5 ml (1 level tsp) mayonnaise and wholegrain mustard. Instead of using only white wine vinegar or balsamic vinegar, use equal quantities of both. Add 5 ml (1 tsp) each chopped parsley, basil and chives. Add 15-30 ml (1-2 tbsp) of your favourite herb, finely chopped. Add 5-10 ml (1-2 tsp) basil pesto. Flavour with any one, or a mixture of, the following: chopped sun-dried tomatoes or pesto, chopped olives, capers, chopped gherkins, chopped red onion, fresh chilli. Makes 125 ml (1/2 cup).
