Ingredients (6)

30.00 ml vinegar — balsamic, grape or red wine
0.00 lemon — zest only
1.00 garlic — cloves
75.00 ml oil — mixture of canola and olive oil
0.00 salt and freshly ground back pepper
0.00 sugar — pinch

Method:

Juice the lemons and grate the rind (if using). Bruise the garlic (if using) with
the flat side of a knife blade. Pour the oil into a measuring jug, add the lemon juice or vinegar, whole garlic (if using) and remaining ingredients and blend with a wire whisk. Leave to stand for at least 30 minutes so the garlic flavour can infuse the dressing.
