Basic sugar syrup

  • 250
    granulated sugar
  • 250


Combine the sugar and water in a heavy-based saucepan. Bring to the boil over high heat.
As soon as the mixture comes to a rolling boil, remove the pan from the heat.
Cool completely before using, or store in the fridge in a glass jar.
Makes enough for 1 batch of fresh fruit sorbet or best-ever watermelon sorbet.

Makes 1 cup.
