Basic stuffed eggs

  • 6
    hard-boiled eggs, shelled and halved
  • 50
    cream cheese, smooth cottage cheese or softened butter
  • 30
  • salt and black pepper to taste
  • halved olives
  • prawns
  • chopped parsley
  • thinly sliced radishes
  • smoked salmon slivers
  • sweetcorn kernels
  • diced red peppers


Carefully remove the egg yolks, ensuring that the egg whites remain intact. Place the yolks in a mixing bowl and add the cream cheese and mayonnaise. Mix until smooth and season to taste with salt and black pepper. Spoon a little of the filling into each egg white half and decorate with any of the suggested garnishing ingredients. Alternatively, the filling may be spooned into a piping bag and piped into the egg white halves.
