Basic pesto sauce

  • 2
    cloves garlic
  • 250
    ml
    fresh basil leaves
  • 100
    ml
    olive oil (you may need more)
  • salt and pepper to taste
  • a handful (or more) of Parmesan or pecorino cheese
  • 30
    ml
    fresh ricotta cheese (optional)
 

Method

 
Place peeled cloves garlic and the basil leaves in a food processor. With the motor running, slowly add the olive oil until a smooth liquidy paste forms. Season with salt and pepper. You can also add a good handful or two of grated Parmesan or pecorino and, if you need to stretch it, add a tablespoon or two of fresh ricotta cheese.
