Ingredients (6)

2.00 garlic — cloves
250.00 ml fresh basil
100.00 ml olive oil
salt and freshly ground black pepper — to taste
parmesan cheese — or pecorino cheese
30.00 ml ricotta cheese

Method:

Place peeled cloves garlic and the basil leaves in a food processor.
With the motor running, slowly add the olive oil until a smooth liquidy paste forms. Season with salt and pepper.
You can also add a good handful or two of grated Parmesan or pecorino and, if you need to stretch it, add a tablespoon or two of fresh ricotta cheese.
