Basic mince mixture

  • 5
    onions, finely chopped
  • cloves garlic, crushed
  • 3
  • salt and freshly ground black pepper
  • 850
    whole peeled tomatoes, finely chopped
  • 70
    tomato paste


In a large saucepan, sauté; the onion and garlic in a little oil until tender. Add small quantities of the mince at a time and fry until done. Season well with salt and pepper. Mix the chopped tomatoes and their juice with the tomato paste. Add to the mince, reduce the heat and simmer for a few minutes. Remove from the heat and cool. Divide the mixture into five batches and freeze until needed.
