Ingredients (6)

2.00 kg lean beef — minced
2.00 onions — large, finely chopped
100.00 ml fresh parsley — finely chopped
salt
freshly ground black pepper
oil

Method:

Combine all the ingredients. Season carefully with salt and pepper, to enhance the flavour of the meat. Shape into fairly large balls and flatten slightly. Work with a light hand throughout. A hamburger that is lightly packed cooks more evenly and has a better texture. But ensure the burger is packed firmly enough to prevent it falling apart while cooking. Brush the hamburgers with a little oil. Heat a cast-iron pan but do not put any oil in it. Cook the hamburgers on one side and carefully turn them over to cook the other side. The hamburger should be juicy and slightly pink on the inside. Serve on a slice of toasted roll with a salad or vegetables.
Makes about 15 hamburgers.
