Ingredients (10)

8.00 dried red chillies
120.00 ml coriander — seeds
60.00 ml cumin — seeds
2.00 ml fenugreek seeds
10.00 ml black mustard seeds
10.00 ml black peppercorns — whole
10.00 ml garam masala
15.00 ml turmeric — ground
5.00 ml ginger — ground
4.00 curry leaves

Method:

Remove stalks and seeds from chillies.

Dry fry with next six ingredients, shaking pan, so as not to burn spices and to release the rich aroma.

Grind to a powder in a mortar and pestle or coffee grinder, then stir in ginger and turmeric.
