Basic bread dough

    white bread flour

    instant dried yeast

    lukewarm water


1. Sift the flour, salt, yeast and sugar in a large mixing bowl. Make a well in the centre of the mixture and pour in the water. Stir the fl our in from the sides of the well until the mixture forms a ball.

2. Place on a lightly floured surface and knead for 10 minutes until the dough is smooth and elastic. Alternatively, use the dough hook on a food processor to knead the dough at a slow speed for 10 minutes.

3. Roll the dough into a ball and place in a lightly oiled glass bowl. Cover with a damp dishcloth and set aside in a warm place to rise until it has doubled in size.

4. Knead the dough again lightly, then place in a greased baking tin. Leave to rise again until it has doubled in size. Bake in a preheated oven for 15 minutes then reduce the temperature to 190°C and bake for a further 20 or 25 minutes until cooked through. Remove from the oven and cool on a wire rack. (It should sound hollow when you tap the bottom of the loaf.)
