100.00 g noodles — glass or instant variety
6.00 garlic — cloves, crushed
1.00 fresh coriander — chopped
125.00 ml peanut butter — smooth
65.00 ml soy sauce
30.00 ml honey
5.00 ml oil
15.00 ml vinegar — white wine
5.00 ml sherry — dry
2.00 cucumber — peeled, strips
fresh coriander — optional

Method:

Remove the chicken skin and shred the meat. Set aside. Prepare the noodles according to the packet instructions and set aside. Process the garlic and coriander in a food processor to form a paste. Add the peanut butter, soy sauce, honey, oil, vinegar and sherry, and process until smooth. Add a little water if the paste is too thick. Drain the noodles, arrange on 6 serving plates and top with the cucumber strips. Moisten the shredded chicken with a little of the sauce and spoon on top of the cucumber. Garnish with coriander leaves if desired and serve with the remaining sauce on the side.
