Ingredients (10)

125.00 g butter — or margarine, melted
180.00 ml castor sugar
1.00 eggs — beaten
5.00 ml vanilla — essence
250.00 ml bananas — mashed
375.00 ml flour — cake, sifted
2.00 ml Bicarbonate of soda
2.00 ml salt
50.00 g pecan nuts — chopped
16.00 pecan nuts — halved

Method:

1. Cream together butter and castor sugar until pale and fluffy. Beat in egg, vanilla essence and bananas. Sift together flour, bicarbonate of soda and salt; fold into creamed mixture.
2. Add the chopped nuts and mix well. Spread mixture into a greased 220 ml square pan, mark lightly into 16 squares; place pecan halves in centre of each square.
3. Bake at 180 ºC for 40 minutes, or until a skewer inserted into the centre comes out clean. Remove from the oven, leave to cool in a pan five minutes before turning out onto a wooden board. Cut into squares, leaving to cool on a wire cooling rack.
