Ingredients (11)

15.00 ml butter
1.00 onion — coarsely chopped
5.00 ml curry powder
4.00 eggs — extra-large, seperated
15.00 ml flour — cake
5.00 ml Baking powder
50.00 ml milk
1.00 lemon — juice only
2.00 bananas — thinly sliced
50.00 ml sultanas
75.00 ml rice — cooked

Method:

Preheat the oven to 160 ºC (325 ºF). Grease an ovenproof dish with margarine or butter.
Melt the butter in a pan and sauté the onion until soft. Add the curry powder and stir-fry for about 1 minute, taking care not to burn the mixture.
Beat the egg yolks lightly, add the cake flour, baking powder, milk and lemon juice. Add the curry and onion mixture, the bananas, sultanas and rice. Season to taste with salt and pepper. Beat the egg whites until stiff and fold into the mixture. Pour into the prepared dish and bake until the mixture has set. Serve with a salad. Serves 4.
