Banana ice cream

  • 1
    bananas, peeled and cut into thick slices
  • 15
    fresh lemon juice
  • 250
  • 30
    castor sugar


1. Purée the bananas and lemon juice in a food processor. Add the cream and castor sugar and purée again until just mixed in. Pour the mixture into an ice-cream dish, cover and place in the freezer until almost frozen. As the mixture freezes, ice crystals will form along the sides. Return it to the food processor and pulse for a few minutes to break up the ice crystals. Return the mixture to the ice-cream dish and place in the freezer until completely frozen.
Makes about 1 litre.
