Ingredients (10)

3.00 bananas — ripe
60.00 ml white sugar
100.00 ml flour — cake
7.00 ml Baking powder
80.00 ml milk
1.00 ml nutmeg — grated
oil — for frying
SYRUP
250.00 ml white sugar
250.00 ml water
coconut — toasted

Method:

1. Mash bananas. Add sugar, flour and baking powder. Gradually stir in milk to form a smooth batter.
2. Drop spoonfuls into hot oil and deep fry until golden and crisp. Drain on paper towel.
3. SYRUP: Heat sugar and water together in a saucepan. Stir over gentle heat until sugar dissolves, then simmer without stirring until mixture forms a thin syrup.
4. Place fritters onto a serving plate and drizzle with syrup, then sprinkle with toasted coconut and serve.
