Ingredients (9)

2.00 bananas — large
50.00 g potato flour — or cornflour
120.00 ml water
15.00 ml sugar
salt — just a pinch
45.00 ml desiccated coconut
15.00 ml sesame seeds
1.00 Litres vegetable oil — for frying
125.00 ml golden syrup

Method:

Peel the bananas, and cut each into 4 equal pieces.
Mix the potato flour with the water, sugar and salt. Stir the mixture until it becomes smooth.
Add the coconut and sesame seeds and stir thoroughly.
Heat the oil in a large pan. Dip the banana pieces in the batter to coat them, and deep-fry in batches over high heat for about 2 minutes, until the batter is crisp and golden brown.
Remove from the oil and drain thoroughly on absorbent paper.
Arrange on a serving plate, pour over the syrup and serve.
