Banana fish fillets

  • 4 thick yellowtail or Cape salmon fillets, boned and skinned
  • 1 cup vegetable stock
  • 2 tbsp light soya sauce or sweet soya sauce
  • 2 red chillies, deseeded and finely sliced
  • juice and peel of 1 lime or small lemon
  • 1 red pepper, sliced very thinly
  • 4-6 bananas, sliced lengthways

Preheat oven to 200 °C.
Place fillets in a baking dish.
Mix stock, soya sauce, chillies and spring onions together and pour over fish.
Toss in bananas and bake for 15-20 minutes, uncovered.
Serve with brown and wild rice tossed with spring onions, lemon peel and avocado.
