Ingredients (13)

125.00 g butter
250.00 ml castor sugar
125.00 ml brown sugar — soft
10.00 ml golden syrup
4.00 bananas — ripe, mashed
2.00 eggs — whisked
625.00 ml flour — self-raising
3.00 ml Bicarbonate of soda
5.00 ml nutmeg — ground
10.00 ml ginger — ground
5.00 ml vanilla — essence
30.00 ml milk
125.00 ml walnuts — chopped

Method:

Preheat the oven to 180 °C and lightly grease a 20 x 10 x 7 cm loaf tin with butter or margarine.
Cream the butter, sugars and golden syrup together until light and fluffy. Beat small quantities of the mashed banana and eggs in at a time.
Sift the dry ingredients together. Blend the vanilla essence and milk. Fold the dry ingredients into the butter mixture, followed by the milk and finally the nuts.
Mix lightly, turn into the loaf tin and bake for about one hour or until a testing skewer comes out clean.
Cool slightly in the tin, turn out and serve sliced with butter.
Makes a large loaf.
